Ingredients

For the plain cashew cream cheese:

  • 1 cup raw cashews (soaked overnight)
  • 1 Tbsp lemon juice
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp tahini
  • 2 Tbsp coconut oil , melted
  • generous pinch salt

For the strawberry cashew cream cheese:

  • all ingredients for plain cashew cream cheese, plus:
  • cup strawberries , chopped

For the blueberry cashew cream cheese:

  • all ingredients for plain cashew cream cheese, plus:
  • cup blueberries

For the lemon cashew cream cheese:

  • all ingredients for plain cashew cream cheese, plus:
  • ½ tsp lemon extract
  • 2 lemons (zested)

For the roasted beet cashew cream cheese:

  • all ingredients for plain cashew cream cheese, plus:
  • ½ cup roasted beet cooked and roughly chopped
  • 1 heaping teaspoon lemon zest

For the lemon dill cashew cream cheese:

  • all ingredients for plain cashew cream cheese, plus:
  • 2 lemon (zested)
  • 1 Tbsp fresh dill , roughly chopped
  • 2 Tbsp capers , drained

For the sundried tomato cashew cream cheese:

  • all ingredients for plain cashew cream cheese, plus:
  • ¼ cup sundried tomatoes packed in oil , roughly chopped

Instructions

For the plain cashew cream cheese:

  1. Soak your cashews overnight in lukewarm water. (Want to make this, but didn’t plan that far ahead? No problem! Pour boiling water over your cashews and soak for 30 minutes, or boil for 15.) However you soak them, rinse and drain your cashews before using.
  2. Make the plain cashew cream cheese. Transfer soaked, rinsed, and drained cashews to the bowl of a food processor. Add remaining ingredients and pulse until desired consistency, stopping often to scrape down the sides of the bowl.

To make flavoured cashew cream cheese:

  1. Add the ingredient(s) for the variety you want to make to the bowl of the food process with the plain cashew cream cheese. Process again until smooth (add 1 tablespoon of lukewarm water to thin out the mixture, if needed).
