Ingredients

For the pumpkin spice french toast:

  • ½ cup pumpkin purée
  • ¾ cup non-dairy milk, unsweetened (we used macadamia)
  • 1 Tbsp organic cornstarch
  • 1 tsp pumpkin pie spice
  • ½ tsp pure vanilla extract
  • 8 slices Silver Hills Sprouted Bakery Big Red's Bread™ (or your favourite Silver Hills Bakery sprouted whole grain bread)

To serve:

  • to taste maple syrup
  • 1 – 1½ cups coconut whip
  • 1 tsp pumpkin pie spice (plus more for garnish)

Instructions

For the pumpkin spice french toast:

  1. Mix all plant-based french toast ingredients except bread in a shallow bowl. Dip both sides of bread, one slice at a time.
  2. Cook in a greased or non-stick pan over medium heat until lightly browned. Flip bread, and cook until the second side is lightly browned. (Cook in batches as needed based on the size of your pan).
  3. To keep your first slices warm while you cook the rest, place cooked french toasts on a cooling rack on a baking sheet in the oven set on warm. (To avoid soggy slices, do not cover).

To serve:

  1. In a small bowl, mix pumpkin pie spice into coconut whip until well combined.
  2. Serve french toast with maple syrup, a generous dollop of pumpkin spice-flavoured coconut whip, and an extra sprinkle of pumpkin spice.
