Ingredients

For the Garlicky Kale Veggie Burger Patties:

  • 2 cups packed kale leaves roughly chopped
  • 4 – 6 garlic cloves minced
  • 1 Tbsp olive oil
  • 1 can (398 ml / 14 fl oz) chickpeas (garbanzo beans), drained and rinsed
  • 1 cup cooked quinoa
  • cup hummus
  • 2 Tbsp lemon juice
  • 1 lemon , zested
  • ¼ tsp garlic powder
  • tsp onion powder
  • to taste salt and pepper

For the Garlicky Kale Veggie Burger Patties:

  1. Preheat oven to 350℉. In a large skillet over medium-high heat, sauté kale in olive oil until it is softened. Add garlic and cook for 1 minute longer. Let cool to lukewarm.
  2. Combine all ingredients in the bowl of a food processor until mixture sticks together but there are still some pieces of chickpea and quinoa. Form into 4 patties and bake on a cookie sheet fitted with parchment paper for 15 minutes. Gently flip patties and bake a further 10 minutes, until nicely browned and warmed through.

To Serve:
