Fresh and Oil-Free Edamame Spread
A good spread goes beyond just a toast topper (although we love this one on our Sprouted Power™ Mack’s Flax bread). Swap this fresh and smooth version in for your regular hummus to make veggie sticks, sandwiches, and crackers come alive. We also made it oil-free, making it an extra-healthy after-school snack or movie night option for the family.
2 cups shelled edamame beans, thawed and drained
2 garlic cloves, crushed
3–4 tablespoons lemon juice
1/4 cup tahini
2 tablespoons fresh parsley
Salt and pepper to taste
Place all ingredients in the jar of a food processor or blender and blend until almost smooth, leaving a slightly chunky texture. Enjoy on our Sprouted Power™ Mack’s Flaxbread.
