Creamy baba ganoush and lightly sweet, just-crisp roasted veggies on a chewy toasted Silver Hills Bakery Sprouted Power™Bagel—it’s a match made in heaven that comes together in minutes!

Ingredients
- 1 Silver Hills Sprouted Bakery Organic Sesame Sunflower Bagels (or your favourite Silver Hills Bakery Sprouted Power™ Bagel)
- 2 Tbsp baba ghanoush
- 2 – 4 slices zucchini (roasted)
- 2 – 4 slices red pepper (roasted)
- 1 handful arugula
- 2 – 4 rings red onion (grilled)
- drizzle balsamic reduction (we like Nonna Pia's)
Instructions
Split and toast bagel. Spread one side generously with baba ghanoush, then top with roasted zucchini and bell pepper, grilled onion rings/slices, and a drizzle of balsamic reduction.
Top with second half, and enjoy!
