Ingredients

For the Tempeh Breakfast “Sausage”:

  • 1 package tempeh
  • 1 cup vegetable broth
  • 4 drops liquid smoke
  • 1 tsp ground fennel
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp ground cumin
  • 1 pinch ground nutmeg
  • 1 pinch ground mustard
  • to taste salt and pepper

To Assemble the Bagel Breakfast Sandwich:

For the Tempeh Breakfast “Sausage”:

  1. To make the “sausage” patties, cut the tempeh into rounds a bit smaller than the bagels using cookie cutters then slice each round into 2 horizontally to create 4 patties.
  2. Combine the broth and spices in a shallow pan and add the tempeh. Bring to a slow boil and cook for 20 minutes, turning patties around from time to time. Drain on paper towels before pan-frying briefly to crisp up.

To Assemble the Bagel Breakfast Sandwich:

  1. Toast bagels and spread with ½ tablespoon Vegenaise then top with vegan egg, plant-based tempeh breakfast sausage patty, tomato and lettuce, and bagel top.
