Enjoy comfort food in all its glory, guilt-free! Our Lentil Shepherd’s Pie is a plant-based, healthier take on the classic casserole, sure to satisfy any tummy.

Instead of meat, this dish calls for a rich lentil and vegetable filling. Using thyme, tamari, and vegan Worcestershire sauce to bring a rich flavour to the filling, the lentil and veggies are cooked on the stove top before transferred to a baking dish and topped with mashed potatoes and sprouted whole grain breadcrumbs. Baked until golden, this dish can warm up even the chilliest evenings.

Ingredients

  • 1 Tbsp olive oil
  • ½ cup onion , finely chopped
  • 1 carrot , peeled and finely chopped
  • ¼ cup celery , finely chopped
  • 2 tsp fresh thyme , roughly chopped
  • 1 can (540 ml / 19 oz) brown lentils , rinsed and drained
  • 2 Tbsp soy sauce (or tamari)
  • 1 Tbsp vegan Worcestershire sauce
  • 4 large Yukon Gold potatoes , cooked and mashed with non-dairy milk and vegan buttery spread
  • ½ Tbsp vegan buttery spread
  • 2 Tbsp breadcrumbs (we used Silver Hills Bakery Steady Eddie Sprouted Wheat Bread)

Instructions

  1. Preheat oven to 400°F.
  2. Heat oil in a large skillet over medium-high heat. Add in the onion, carrots, and celery then cook until softened.
  3. Add thyme and cook 1 minute longer.
  4. Add lentils, soy sauce, and Worcestershire sauce then cook until thickened and vegetables are cooked through, approximately 10 minutes longer.
  5. Transfer lentil mixture to an ovenproof dish. Top with mashed potatoes, dot with buttery spread, and cover with breadcrumbs.
  6. Bake for 10 to 15 minutes, until golden brown. Enjoy!

  • Double the recipe to drop off a meal to a neighbour. Or make ahead and store a whole lentil shepherd’s pie in the freezer for an even easier weeknight meal that you can just pop into the oven to warm. This dish can last in the freezer for up to 1 month in an airtight container.
