Fancy a burger? You won’t miss the meat or need bottled dressing with our mouthwatering White Bean Burger with Fennel Slaw. Creamy white beans and seasonings come together simply and beautifully to make these delicately succulent, savoury patties. Build it on a sprouted whole grain burger bun and top with a light lemon and caper sauce and a refreshing fennel slaw. We dare you not to say “Mmmm…”.

(Fennel not in season? Use more traditional cabbage instead—it’s a no-fail standby that gives all the crunch you need, no matter what time of year it is).

Ingredients

For the White Bean Burger Patties:

  • 4 cloves garlic , crushed
  • 2 lemons , zested
  • ½ tsp salt
  • ½ tsp red pepper flakes
  • 2 Tbsp breadcrumbs , or ground flaxseed (we used our Sprouted Breadcrumb recipe)
  • 3 Tbsp chickpea flour
  • 2 cans (398 ml / 14 fl oz) navy beans (or other white beans), drained and rinsed
  • ¼ cup fresh parsley , chopped
  • 1 Tbsp Dijon mustard
  • 1 Tbsp lemon juice
  • 1 Tbsp fresh dill , chopped
  • olive or vegetable oil (for frying)

For the Fennel Slaw:

  • 1 bulb fennel , thinly sliced
  • ½ Tbsp olive oil
  • ½ lemon , juiced
  • to taste salt and pepper

For the Sauce:

  • ½ cup vegan mayonnaise
  • ½ lemon , zested and juiced
  • 1 Tbsp capers , chopped
  • to taste salt and pepper

To Serve:

For the White Bean Burger Patties:

  1. To make the white bean burger patties, add all ingredients to the bowl of a food processor and pulse until the mixture comes together but is still chunky. Adjust seasonings to taste and form into patties.
  2. Preheat a large skillet over medium heat. Add a small amount of oil and cook patties until golden brown, approximately 5 minutes. Flip and cook the other side.

For the Fennel Slaw:

  1. To make the slaw, mix all ingredients in a small bowl, adjust seasoning to taste, and set aside.

For the Sauce:

  1. Mix all sauce ingredients in a small bowl and set aside.

To Assemble:

  1. Grill or toast the buns and stack each bun with a patty, spinach, avocado, fennel slaw, and sauce. Serve and enjoy!
