Recipe The Ultimate Plant-Based Alpine Sandwich

Healthy eating and being active go hand in hand, and we’re big fans of day hiking. To see just how much energy we could get out of an Instagram-worthy alpine sandwich, we built our own veggie version with creamy avocado, fresh produce, hearty tempeh, and zippy curried hummus on The King’s Bread, and then hit the trails. We’re happy to say not only did we feel plenty fueled, but we discovered it’s perfect for splitting with your hike buddy or saving the leftovers for a later meal (we did, and it held up great).
Ingredients
- 2 slices Silver Hills Sprouted Bakery The Queen's Khorasan™ bread (or your favourite Silver Hills Bakery sprouted whole grain bread)
- 2 Tbsp curried hemp hummus
- ½ avocado , sliced
- ¼ red pepper , sliced
- ½ block tempeh
- ¼ cup cucumber , sliced
- 1 handful alfalfa sprouts
- 1 handful spinach
Instructions
Spread half the hummus on each slice of bread.
Layer remaining ingredients on one slice and top with the other slice. Head out on a day hike and enjoy!
