This vegan version of pesto makes a delicious spread for sandwiches, flatbreads and bagels. You can also mix it into salad dressing, use it as a veggie dip or even drop a dollop onto your favourite soup or stew.

  • 1 cup brazil nuts
  • 1 bunch fresh basil , stems removed (about 2 cups of loosely packed leaves)
  • 1 lemon , zested and juiced
  • 1 Tbsp nutritional yeast
  • ½ clove garlic


  1. Soak the brazil nuts in water for at least four hours or overnight.
  2. Drain the brazil nuts and add all the ingredients into a food processor. Blend until mostly smooth, scraping down the sides as needed. You may need to add some water to help blend.
  3. Store in an airtight container in the refrigerator.
