Recipe Brazil Nut Pesto

This vegan version of pesto makes a delicious spread for sandwiches, flatbreads and bagels. You can also mix it into salad dressing, use it as a veggie dip or even drop a dollop onto your favourite soup or stew.
Ingredients
- 1 cup brazil nuts
- 1 bunch fresh basil , stems removed (about 2 cups of loosely packed leaves)
- 1 lemon , zested and juiced
- 1 Tbsp nutritional yeast
- ½ clove garlic
Instructions
- Soak the brazil nuts in water for at least four hours or overnight.
- Drain the brazil nuts and add all the ingredients into a food processor. Blend until mostly smooth, scraping down the sides as needed. You may need to add some water to help blend.
- Store in an airtight container in the refrigerator.
