Ingredients

For the kale pesto:

  • 4 large leaves kale , stemmed and roughly chopped
  • ½ cup pine nuts
  • 2 cloves garlic
  • 2 – 3 Tbsp nutritional yeast
  • ½ lemon , juiced
  • 3 – 4 Tbsp olive oil
  • to taste salt and pepper

For the sandwich:

For the kale pesto:

  1. Blend kale pesto ingredients in a food processor or high-powered blender until desired texture is achieved. Store in the refrigerator for up to 5 days.

For the sandwich:

  1. Toast bread if desired. Spread kale pesto generously on one (or both!) slices.
  2. Top one side with sliced avocado, baby spinach, and chopped jalapeños (if using). Close the sandwich with the other slice, and enjoy!
