Ingredients

  • 2 cups carrots , shredded
  • 1 orange
  • 3 ¼ cups sugar
  • 1 lemon , juiced

Instructions

  1. Remove the top peel from the orange using a potato peeler and cut into thin strips with a sharp knife. Remove the skin and discard. Cut segments out and chop finely before transferring to a medium saucepan. Add remaining ingredients and bring to a boil over medium high heat.
  2. Lower heat to medium low and simmer until thickened and a spoonful gels quickly when placed onto a very cold plate, approximately 30 minutes. Transfer to a jar and keep in refrigerator for up to 1 month or process in a water bath for longer storage.
  3. Serve with your favourite Silver Hills sprouted bread and vegan cream cheese.
