This vegan version of pesto makes a delicious spread for Silver Hills Bakery sprouted whole grain bread sandwiches and bagels. You can also mix it into salad dressing, use it as a veggie dip or even drop a dollop onto your favourite soup or stew.
Soak the brazil nuts in water for at least four hours or overnight.
Drain the brazil nuts and add all the ingredients into a food processor. Blend until mostly smooth, scraping down the sides as needed. You may need to add some water to help blend.
Store in an airtight container in the refrigerator.
