Complemented by the smokey, comforting flavour of these deliciously easy carrot dogs, this recipe tastes just like a traditional hot dog.

Ingredients
For the Easy Carrot Hot Dogs:
6mediumcarrots(look for hot dog width carrots (¾-inch to 1-inch wide with even thickness / less taper))
1cupvegetable broth
⅓cupapple cider vinegar
3Tbspsoy sauce
1Tbspgrainy mustard(or Dijon mustard)
1tspgarlic powder
1tspsmoked paprika(or a mild smoked chili powder such as ancho or chipotle (see tip))
Your family’s favourite condiments and plant-based hot dog toppings
Instructions
Peel carrots, and trim to fit length of the bun.
Bring a large pot of water to a boil (make sure the water is deep enough for the carrots to cook fully submerged).
Add carrots, cover, and simmer until tender when poked with a fork, about 10 minutes. (Do not boil until soft—you want them to be firm like a hot dog, but not crunchy).
Skip some dishes and combine the broth and marinade ingredients in a shallow baking dish or container with a lid, mixing well.
Add cooked carrots to the marinade. Cover and refrigerate overnight (minimum 8 hours). Flip the carrots after a couple hours (or jiggle the container if they’re floating) so they marinate evenly on all sides.
Heat a nonstick pan (or grill) and lightly oil. Remove carrots from container and fry or grill for about 5 minutes or until carrots have sear marks on several sides.

Tips
- Thinner carrots are best, trim thicker parts or peel them down so they’re closer to the same thickness of a regular hot dog.- If possible, choose a container that will allow the carrots to be submerged in as much liquid as possible.- No smoked paprika or other smoked chili powder in your pantry? If you’ve got liquid smoke hiding in the back of your cupboard, a few drops are a suitably smoky swap! No liquid smoke either? Add a generous squirt of your favourite plant-based barbecue sauce.- Didn’t plan for an overnight soak? You can still try these carrot dogs the same day. Instead of boiling them in water first, double the broth, vinegar, soy sauce, and spices so you have enough liquid to cover and simmer the carrots in the marinade. The flavour may be milder, but they’ll be tasty with less time.- You can grill these on the barbecue too! Give your grill grates a quick swipe with a little oil, and grill the way you would with any veggie dog.
