1227 g / 8 oz package plain non-dairy cream cheese, softened (we used Daiya plain)

Instructions
Preheat your oven to 350℉. Melt your butter in a small pan over stove-top or microwave. Pour into a small bowl and to let cool off while you slice the bagels into smaller chunks for dipping (we cut ours into bite-sized eighths, but you can cut them as big or small as you like!).
Lightly brush the inside of your Bundt pan with melted butter, making sure to get into all the grooves.
In a wide, shallow bowl or pie plate, mix cinnamon and both sugars.
Dip your bagel pieces into a melted butter bath one at a time, then roll each in cinnamon sugar coating until generously coated. Place in your Bundt pan. If you’re fond of plump, juicy raisins, make your monkey bread extra fruity and scatter another handful between each layer as you fill your Bundt pan with cinnamon sugar-coated bagel bits. Repeat this process until you’ve used all your bagel pieces. If there is extra butter or sugar, sprinkle on top.
Place in the oven, uncovered, for 30 – 35 minutes.
Remove from the oven and let cool for 5 minutes. While still warm, place a plate or platter larger than the widest part of your Bundt pan over the opening. Using oven mitts and both hands, hold the plate firmly together on top of the pan and turn the whole thing upside down. Gently lift the Bundt pan off your monkey bread and set aside. Please note: Do not wait until the pan has cooled. If left to cool longer, your monkey bread could stick to the pan.
Mix all vegan cream cheese frosting ingredients together with hand mixer, stand mixer, or with a wooden spoon until well blended. Apply to bread as an icing, drizzle on top, or use as dip.
Tips
- This recipe is very sweet as written(it is a sweet treat—not an everyday breakfast—after all). To reduce sweetness, try one of these three options: 1) coat your bagel pieces with a lighter hand (and use less of the cinnamon sugar coating in total (e.g., 3/4 cup light brown sugar, ½ cup sugar); 2) if you have extra cinnamon sugar after all your bagel pieces are coated, skip the instruction to pour the rest over the top; or 3) increase your bagel quantity by using 8 bagels (1 1/2 bags) and give each piece a lighter dusting to spread the volume of sugar across more bagel pieces. You can also skip or go light on the icing.- Add some variety. Sprinkle a handful of your family’s favourite seeds or chopped nuts between layers. Or swap out the raisins for zingy dried cranberries or other dried fruit you enjoy to make your own one-of-a-kind take on our bagel monkey bread shortcut.
