Greet the morning and set your day up for success with a savoury and satisfying, easily-assembled, plant-powered breakfast! Try this easy tofu scramble and simple salsa as an open-faced topped toast or as a hearty breakfast sandwich on Silver Hills Bakery sprouted whole grain bread.
Combine all salsa ingredients in a bowl, stir, season to taste, and set aside.
For the tofu and veggie scramble:
Heat a saucepan over medium-high heat. Add olive oil and tofu, breaking up tofu in the pan.
Add vegetable stock, turmeric, onion and garlic powder, then stir to coat the tofu.
Stir in green onions and red peppers, cooking until peppers are warm and slightly soft.
Season with salt. Mix in vegan cheddar-style cheese shreds, and stir until cheese begins to melt. Remove pan from heat.
To serve:
Toast bread. Top with sliced avocado, tofu scramble, and salsa. Serve as an open-faced topped toast, or close with a second slice of bread and enjoy as a hearty breakfast sandwich.
