Instructions
For the Cheese Toast Roll-ups:
Use a rolling pin to flatten each slice of bread. (We cut the crusts off ours to make the roll-up a little easier.)
Melt buttery spread in a frying pan over medium-high. While it melts, top bread with cheese slices, and tightly roll each slice.
Place rolled slices seam-side down into the pan. Allow seam-side to become golden before grilling remaining sides of the roll-ups. Grill until all sides are golden and cheese is melted.
Serve with ketchup for dipping, along with your kids’ favourite veggie sticks or apple slices.
For the Cheese Toast with Zucchini Ribbons:
Use a vegetable peeler to make zucchini ribbons and set aside. Toss ribbons in olive oil, apple cider vinegar, and salt and pepper. Set aside.
If you like your cheese toast crunchy on both sides, toast lightly first. (Go lighter than you usually like it, as you’ll be double-toasting when you melt the cheese).
Place toast on a cookie sheet (or the toaster baking tray if you’re using a toaster oven), and top toast with cheese slices. Move oven rack to the top of your oven and set your oven to broil. Watch cheese toast closely, removing from oven as soon as your cheese has melted. (Depending on your oven, this can take between 3-5 minutes—don’t walk away!).
Plate cheese toast, top with zucchini ribbons, and season to taste with salt and pepper. Serve with a simple side salad or slices of tomato.

- **For the Cheese Toast Roll-ups:** - Be sure to begin cooking seam-side first (seam-side down). Swap out the zucchini ribbons for thin slices of dill pickles as an even quicker option.
