2cupssprouts(such as alfalfa, clover, or broccoli (or your favourite mix of smaller sprouts!))
¼English cucumbersliced
1Tbsplemon juice
1 Tbspolive oil,extra virgin

Instructions
For the Green Goodness Dressing
In a blender or small food processor, combine chives, fresh herbs, mayonnaise, and non-dairy yogurt.
Add lemon zest and juice, olive oil, salt and pepper. Process until smooth, and set aside.
For the Sandwich
Wash and prepare lettuce and cucumber. In a medium-sized bowl, dress the cucumber slices and lettuce in lemon juice, olive oil, salt and pepper, tossing to coat.
If desired, toast your bread lightly. Spread 1 tablespoon of Green Goodness dressing on each slice of bread. Top one side of each sandwich with half an avocado (sliced or mashed—whichever is easier!), and season with salt and pepper.
Arrange mozzarella slices on top of the avocado, followed by lettuce and cucumber slices.
Top with a generous handful of sprouts, close the sandwich, and enjoy!
Tips
- Any fresh, leafy green herb you like works here. Use what’s in-season from your backyard or balcony herb garden, what looks good at the farm market, or whatever is plentiful in the produce section for year-round enjoyment. Save it in the fridge for another round of sandwiches, or use it as a salad dressing or a dip for veggies within 3 – 5 days.- Make the Green Goodness dressing thicker and more spreadable by using half the lemon juice and half the olive oil called for. Then up the lemony freshness by using the zest of the entire lemon.- In a rush?
